Wailea Beach Marriott Wins Excellence in Sustainability Award

WAILEA, MAUI — The Wailea Beach Marriott Resort & Spa received the 2014 Excellence
in Sustainability award at the twelfth annual ‘Aipono Restaurant Awards Gala, held Sunday,
April 13, in the ballroom of the Four Seasons Resort Maui at Wailea.
While most winners in the three-dozen ‘Aipono categories are determined by vote of the
readers of Maui No Ka ‘Oi Magazine, Maui business involved in conservation select the
Excellence in Sustainability winner. This year’s sponsors were Pacific Biodiesel and Maui EKO
Compost.

Kelly King, Vice President of Pacific Biodiesel, praised the Wailea Beach Marriott for being
“a pioneer in environmental practices, setting the standard for resort recycling, and establishing
proactive erosion control [using] drought- and salt-resistant plants for landscaping.” The hotel
does extensive water conservation, uses locally produced compost, and has significantly reduced
its energy consumption with LED lighting and retrofitted or upgraded equipment. All used
cooking oil is recycled for renewable biodiesel, and the hotel has a reward system that encourages
employees to share conservation ideas.

‘Aipono combines the Hawaiian words ‘ai (food) and pono (excellence) to encompass the
theme of exceptional dining. Sponsored by Maui No Ka ‘Oi Magazine, the ‘Aipono Restaurant
Awards annually recognize the best of Maui’s food, wine and hospitality industries.

“Pono also means to do the right thing,” added King, “and this is our opportunity to recognize
those in the hospitality industry who go the extra mile and take responsibility for their
environmental footprint on our island paradise.”

Some 350 restaurant professionals and industry supporters attended the 2014 ‘Aipono Gala, a
fundraiser for the Maui Culinary Academy at the University of Hawai‘i-Maui College. The event
also provides a rare mentoring opportunity for Academy students, who spend the day of the gala
working side by side with professional chefs in a real-world restaurant environment.
